Ella arrives with har gow, char siu bao, and shumai folded by hand that morning, the same way her family has folded them for generations. The steamers are set right before your guests, and each course emerges in fragrant clouds: delicate wrappers turning translucent, sweet barbecue pork tucked inside pillowy buns, every piece served the moment it is ready.
